One leaf has fallen from a tree somewhere in the woods which means it is sweater weather, cuffing season and time for my favorite apple crisp recipe.

Only… this recipe is a single-serve masterpiece. Enjoy this apple crisp with whipped cream, cold vanilla ice cream or in front of a cozy fire (even if its just streamed on your TV).

Needs: Ramekin and small baking sheet

Ingredients:

  • 1 large or 3 small apples of your choosing (I like honey crisp, pink lady or granny smith apples)
  • Spoonful of white sugar
  • Squeeze of lemon juice
  • 2 shakes of cinnamon
  • 1 shake of clove (optional)
  • 1 Tablespoon of soften butter
  • 1 spoonful of brown sugar
  • 1/4 cup of rolled oats
  • small handful of crushed pecans or walnuts (optional)

Directions:

  1. Preheat oven to 375 degrees and spray ramekin with cooking/baking spray.
  2. Peel, core and slice up apples.
  3. Toss apples with a squeeze of lemon juice, spoonful of sugar and shakes of the spices. Place in the ramekin.
  4. Combine butter, brown sugar, rolled oats and nuts in a bowl with a fork or just your hands. Top the apples with this oat mixture.
  5. Place ramekin on a baking sheet and bake for 30ish minutes.
  6. Let it cool a little and enjoy!
