Repeat after me… healthy lunch… healthy satisfying lunch… easy healthy satisfying lunch. Inspired by one of the only downtown Minneapolis lunch spot salads that I will actually pay money for – I give you the Summery Salmon & Strawberry Salad.

Must have’s for this recipe are a mini blender (like this magic bullet) and a quarter sheet pan.
- Blend up dressing ingredients in mini blender:
- Cup of strawberries
- 1 T honey
- 1 T apple cider vin
- 1 T olive oil
- sal/pep
2. Bake salmon filet on sheet pan with a bit of olive oil, salt and pepper at 350 degrees for 12ish minutes. (note: I like my fish barely cooked through to 140 degrees. So if you like a well done salmon, leave it in a bit longer).
3. Assemble salad in this order:
- Spinach
- Salmon pieces
- Thin sliced red onions
- Walnuts
- Cranberries
- Feta
- Dressing
4. Enjoy! Pair with some sparkling water and try not to eat at your desk. You deserve a good lunch break.
