On the days where you could spend $50 on delivery. Opt to look those veggies you bought last week in the eye and give them a proper send off with this recipe.

The beauty of this recipe is that it is so customizable to whatever you have on hand. The down-side is that it may not taste the exact same each and every time you make it. If you’re like me, that’s what makes this exciting – like a first date that you get to build from scratch (I wish dating was that easy).

Needs: Fry pan with taller sides, like a wok but doesn’t need to be one. Trust me here… you don’t want half of your dinner ending up on the stove top and not your plate.

Ingredients:

  • High-Heat Oil – (veggie, grapeseed, high-heat olive oil)
  • Two double-handfuls total of whatever veggies are in the fridge. Like….
    • Sliced/Shredded/Cubed Carrots
    • Sliced Celery
    • Sliced Onion (red or white)
    • Broccoli florets
    • Sliced Mushrooms
    • Shredded Cabbage
    • Peppers – sweet, bell, hot – whatever you like
    • Spinach
  • 1 clove of garlic chopped up fine
  • Leftover rice* – about a cup/one handful
  • Eggs, stirred up real good
  • Store Bought Stir Fry Sauce (or make your own)
  • The finishers
    • Green Onion Slices
    • Sesame Seeds
    • Lime Wedge

*if you don’t have leftover rice, feel free to make some! I would just put in on the bottom of the dish instead of trying to fry it with the veggies. It will get mushy – speaking from experience.*

Directions:

  1. Heat oil in the an to medium-high heat.
  2. Add in veggies in order of most dense to least dense (I know… science!). You can either everything to the pan as you go or cook some veggies, set aside and cook the others – either works! I usually start with my carrots, celery and onions. Then, I will go to mushrooms, broccoli and down the list. You may need to add more oil to the pan if things are looking dry in there.
  3. After all the veggies are cooked, add in garlic and stir until the smell hits you in the nose then add in the leftover rice to fry up until warm.
  4. Make a hole in the center of the pan so you can see the bottom, turn the heat down to medium-low and add in your egg. Cook it a bit then stir it into the rest of the ingredients.
  5. Now, add that stir fry sauce into the pan and mix everything up.
  6. Throw everything on the plate and finish it with some sliced green onions, sesame seeds or lime juice.
  7. Enjoy! You just saved like $40 on delivery.
