Californian Caprese Salad

Sweet cherry tomatoes, creamy mozzarella, fresh avocados and dreamy balsamic vinegar make this salad sing. Move over lame everyday salads. With this healthy lunchtime stunner, you are on your way to becoming a “salad person.”

With five minutes and a stocked fridge, you’ll be able to throw this salad together. If your avocado isn’t “ready” (aka gives a slight give when squeezed in your hand), go without it in the salad. There’s no use in using a rock hard avocado – you deserve better than that.

Californian Caprese Salad for One

Ingredients:

  • Salad mix (baby spinach/kale mix)
  • Handful of cherry tomatoes
  • 3 basil leaves – chopped
  • ½ an avocado – cubed
  • 1 snack pack of mozzarella or small handful of shredded mozzarella
  • Small handful of walnuts crushed up
  • Bit of raw red cabbage

Dressing:

  • Olive oil
  • Balsamic vin
  • sal/pep

Directions:

  1. Lettuce down first. Top with veggies, herbs, cheese and nuts.
  2. Olive oil over. Balsamic over. Salt/Pep to taste
  3. Enjoy!
