There are some days that just take everything out of you emotionally. When those days come to an end, you deserve a little chocolate cake to drown your sorrows.
Cake shouldn’t have to be for a big, special occasion. All you need is a big mug, a microwave and a dash of this and that. It will pick you up or let you wallow in misery – depends what you’re in the mood for.
Top with whatever jam or whipped cream is in your fridge. Pair with a red wine like a dry zinfandel or juicy merlot. Light a couple candles. Put on your go-to crying songs (Adele’s Set Fire to the Rain for me) and take a deep breath. The cake is here for you.

Needs:
- 12 oz mug (trust me don’t use an 8 oz unless you like cleaning your microwave)
- Microwave
- 3 T flour
- 3 T sugar
- 2 T cocoa powder
- Pinch of Salt
- 3 T Veg oil
- ¼ t baking powder
- 3 T milk
- Splash of vanilla
How to:
- Dry stuff together
- Wet stuff together
- Combine it all in the mug
- Nuke for 90 seconds
- Let it cool a bit
- Pair with red wine, candles and tears
