A can of black beans can be sexy (and spicy) – I’ll prove it to you.
Needs:
Small baking sheet or small non-stick skillet
Ingredients:
- 1/2 can of black beans, drained and rinsed
- 1 egg
- hand full of panko or regular bread crumbs
- three pinches of powdered spices (chipotle, chili, cumin, cayenne or paprika)
- 1/4 of an onion, grated or minced (aka little tiny chopped up pieces)
- 1 bun of your choice (I like anything whole wheat.)
- toppings of your choice like…
- mashed avocado
- pepper jack cheese
- picked red onions
- cilantro
- chipotle mayo
Instructions:
- Preheat the oven to 400 degrees Fahrenheit or heat a little oil in your small non-stick skillet over medium-high heat.
- Mash up half the can of black beans with a fork. Keep other half for topping nachos, adding into a burrito or heating up when you’ve given up on cooking for the day.
- Scramble up an egg and add it to the mashed beans along with breadcrumbs, spices and onion. Hit it with a little salt and pepper, too.
- Create a patty (or two) and either pop it in the oven on a baking sheet or fry it up in a pan. You’re looking for an internal temp of 160 degrees. Once it is up to temp, put cheese on to get it a little melty.
- Meanwhile, get your toppings ready and toast up the buns.
- Once everything is ready, assemble your burger! And enjoy.
